I made my first ever carrot cake this easter.. the cream cheese frosting is sooo good. This cake recipe is a definite keeper,- After dinner, a certain person hid the remains of the cake to finish it himself! I doubled the recipe and made a two layer cake plus a load of cup cake’s that I gave to friends as easter treats and they all raved on about how good they were and asked for the recipe- you want to try it!

We enjoying our nieces over today, they made these cupcake size nest cakes to give at Easter- the origami baskets fit them perfect and theres no gluing at all, and so cheep, I like! I printed a bunch of easter color and fun activity pages off the net for them too- very happy to have found some nice ones depicting true reason for easter. We had a bunny (egg) hunt and went to play at the park.. so much fun, we are exhausted! (or at least I am!!) It great to have little children around, I caught a glimpse today at how greatly rewarding it is to have children in life. The smallest I caught chewing on some sand, and then a stick..! I promise we fed them. I cant wait to do it all again tomorrow, we are off to join more family.. hopefully it will be just as much fun.
