the first of three courses

I’ve never made a three course meal before, not a well organised one anyway. I’m making a meal for 7 and decided to tailor the menu for a little bit of niceness and surprize. Whenever we go to our friends and Niels’ brother for meals we get lavished with the most beautiful foods that are not only a feast for the eyes but a taste sensation galore, so I’m taking a leaf from their book and twisting some new ideas with some of my old favourites.

The starter is going to be simply fresh king prawns and avocado with mixed leaf salad, lemon and dressing accompanied with plenty of oven warmed bread, the remainder of the bread will stay for the entree, my mum’s bacon wrapped chicken, stuffed with fresh basil and sundried tomato cream cheese.. served with mustard mashed potatoes and roasted root vegetables- spiked with bay leaf’s and thyme and red wine vinegar, some roasted bacon coverd dates to nibble and for dessert- home made lemon merangue pie. I think the starter is nice and the chicken is lovely and the side dishes not too boring, and the dessert is a classic. Has Sunday dinner written all over it?

The meal was (quote) ‘scrumdiddily-umptious’ Only a true Texan could come out with that one! It was very much enjoyed and great to sit back and relax and enjoy as things went so smoothly. Watch out for that lemon merangue recipe though, I never noticed untill I was making it that its preperation + cooking time are over one and a half hours! wow, I have to admit I did enjoy all the processes making it! But not one I’ll have the time to make completely from scratch often.. I think I will be making it again tho as it was MrA’s favourite part of the meal, he ate three servings of it! Could cut a few corners and buy ready made pastry etc and its going to be an easy one to keep the ingredients organic too.
